HERRING SUPREME: Daily Diabetic Recipe

HERRING SUPREME

Yield: 8 servings (4 cups total)

INGREDIENTS
- One 12-ounce jar herring in wine sauce, rinsed,
drained, and cut into bite-size pieces
- 1/2 cup light sour cream
- 1/4 cup fat-free mayonnaise
- 2 medium carrots, peeled and shredded
- 1 medium green bell pepper, cored, seeded, and diced
- 1 medium apple, peeled, cored, and diced
- 3/4 cup chopped onion
- 1 tablespoon fresh lemon juice
- 2 teaspoons sugar
- 1 teaspoon celery seed

DIRECTIONS
Combine all the ingredients in a large bowl.
If time permits, chill several hours before serving.
