SPEEDY STEAK: Daily Diabetic Recipe

SPEEDY STEAK

Yield: 6 servings
Serving size: 3-4 ounces meat with 1/2 cup rice

INGREDIENTS
- 1 tablespoon canola oil
- 3 cups sliced raw vegetables (try carrots, broccoli, zucchini, and peppers)
- 2 garlic cloves, minced
- 1-1/2 pounds boneless, skinless chicken breasts
or lean sirloin steak, cooked and sliced into strips
- 2 tablespoons lite soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon dry sherry
- 3 cups cooked rice
- 2 tablespoons toasted sesame seeds

DIRECTIONS
Heat the oil in a wok over high heat. Add the
vegetables and stir-fry for 4 minutes. Add the
garlic and stir-fry for 2 more minutes.

Add the chicken or beef and stir-fry 1 minute. Combine the soy
sauce, sugar, and sherry and add to the wok. Cover and steam for
1 minute. Serve over hot rice and garnish with sesame seeds.
