WATER CHESTNUTS AND SNOW PEAS: Daily Diabetic Recipe

WATER CHESTNUTS AND SNOW PEAS

INGREDIENTS
- 1 teaspoon sesame oil
- 3 garlic cloves, minced
- 2 cups fresh snow peas
- 1 cup sliced water chestnuts
- 1/4 cup fresh bean sprouts
- 1/2 cup low-fat, low-sodium chicken broth
- 1 tablespoon lite soy sauce
- 2 tablespoons pineapple juice
- 1 teaspoon sugar
- 2 teaspoons grated ginger
- 2 teaspoons cornstarch or arrowroot powder

DIRECTIONS
Heat the oil in a wok or skillet over medium-high heat. Add
the garlic and saute for 30 seconds. Add the snow peas, water
chestnuts, and bean sprouts and saute for 1 minute.

In a measuring cup, mix together the remaining ingredients.
Add to the pan and cook until the sauce is thickened,
about 1 minute. Serve immediately.
