Grilled Salmon with Mango Salsa

INGREDIENTS:

3/4 cup orange juice

1/8 tsp salt

3 tbsp sugar

1 1/2 cup mango (1/4" dice)

3 tsp jalapeno (seeded and minced)

1/4 bunch Cilantro (rough chopped, no stems)

1/2 tsp black pepper

6 salmon fillets, seasoned with salt and pepper



COOKING INSTRUCTIONS:

1. Reduce orange juice, salt and sugar until 6 tbsp remains. Cool.

2. When juice reductionis cooled, add mango, cilantro, jalapeno and pepper. Mix well and chill.

3. Grill salmon until done. Place on top of mango salsa on plate.

4. Serve with rice and vegetables.
