Here's a use for that chicken you cooked when making chicken stock (see Soups). The carrot that cooked with the chicken stock is good in the salad, too.

Serving Size: 1/4 recipe
Ingredients
Name Measure Weight
cubed cooked chicken 3 cups ---
large sliced peach 1 ea ---
strawberries or raspberries, sliced 1 cup ---
walnuts, roughly chopped 2 Tbsp ---
plain low-fat yogurt 1/2 cup ---
honey 1 Tbsp ---
grated fresh ginger 1/4 tsp ---
medium cantaloupe, sliced 1 ea ---
lettuce leaves 4 ea ---
Preparation Instructions
1 Combine chicken, peach, strawberries, and walnuts.
2 Stir together yogurt, honey and ginger.
3 On individual salad plates, or on a platter, arrange lettuce leaves and cantaloupe slices.
4 Top with chicken mixture.
5 Pour yogurt dressing on salad.
