Orange Sweet Potatoes
The wonderful combination of the fruit and the veggies will add both sweetness and good health to any dinner dish.

Ingredients

brown sugar 1/3 cup ---
brandy 1/2 cup ---
evaporated skim milk 1/4 cup ---
low-calorie margarine 2 tbsp ---
cooked mashed sweet potatoes 4 cups ---
nutmeg dash ---
Preparation Instructions
1. Grate the peel from one orange. Cut the remaining oranges in half. Scoop out the pulp to yield 2 cups of drained fruit and save the shells.
2. Cut a thin slice from the bottom of each orange shell to make it sit flat. Sprinkle the orange pulp with brown sugar and set aside.
3. Heat the oven to 350 degrees F. In a medium saucepan, heat the brandy, evaporated milk, margarine and salt. Add to the sweet potatoes and mix well.
4. Stuff each of the 8 oranges shells with 1/2 cup of the sweet potato mixture. Sprinkle each shell with grated orange peel. Bake for 30 minutes. Garnish with a dash of nutmeg.
