Grape Tomato Salad with Basil Vinaigrette
This recipe serves: 8


3 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons Dijon mustard
1 tablespoon finely chopped shallots
2 tablespoons fresh chopped basil leaves
salt to taste
freshly ground black pepper
2 pints grape tomatoes



1. Place all the ingredients except the tomatoes in a jar with a tight-fitting lid. Shake well.
2. Gently toss the tomatoes with the vinaigrette. Garnish with fresh basil leaves. (optional)

Serving Size: about 1/2 cup of salad
