VEGGIE SLOPPY JOES: Daily Diabetic Recipe

VEGGIE SLOPPY JOES

Yield: 8 servings

INGREDIENTS
- 1 pound 96% extra-lean ground beef
- 1 14.5-ounce can diced tomatoes with peppers and onion, drained
- 1 cup frozen mixed vegetables, thawed
- 1/2 medium green bell pepper, chopped
- 3 tablespoons ketchup
- 1 teaspoon ground cumin
- 8 small hamburger buns, toasted

DIRECTIONS
Place a 12-inch nonstick skillet over medium high
heat until hot. Cook beef 3-4 minutes or until no
longer pink in center, stirring constantly.

Add tomatoes, mixed vegetables, and bell pepper. Stir
occasionally until mixture begins to simmer, then reduce
heat, cover tightly, and simmer 15 minutes or until
vegetables are tender.

Remove from heat, stir in ketchup and cumin, cover, and
let stand 5 minutes to thicken slightly and allow flavors
to blend. Serve on buns. This dish freezes well: freeze
1/2 cup individual servings in small plastic bags.
