BALSAMIC VINAIGRETTE SALAD DRESSING for CUCUMBER/TOMATO/BEAN SALAD

BALSAMIC VINAIGRETTE SALAD DRESSING
1 cup olive oil
1/4 cup balsamic vinegar
1 clove crushed garlic
1 teaspoon ground mustard
1 pinch salt
Ground black pepper to taste

In a small bowl, whisk together olive oil, vinegar, garlic and ground mustard. Season to taste with salt and black pepper. Stir in minced fresh herbs if desired. Yield: 1-1/4 cup dressing. Nutritional information per serving: 385 calories; 43.25 g total fat; 0 mg cholesterol; 1.02 g carbohydrates; 04 g dietary fiber; .09 g protein.
