Whole-Wheat Banana Bread

Try this when you have a lot of very ripe bananas on hand. These are wonderful anytime, but if you eat them warm from the oven, they make a wonderful dessert.

Ingredients

honey 2 tbsp ---
reduced-fat vegetable oil 3 tbsp ---
vanilla 1 tsp ---
medium banana, mashed 4 ---
lemon juice 2 tbsp ---
whole-wheat flour 2 cups ---
baking powder 2 tsp ---
baking soda 2 tsp ---
raisins 1/2 cup ---
walnuts, roughly chopped or 1/2 cup of Grape-Nuts 1/2 cup ---
Preparation Instructions
1. Mix honey, oil, and vanilla.
2. Add bananas and lemon juice. Mix well.
3. Sift flour, baking powder, and baking soda into banana mixture. Stir.
4. Fold in raisins and nuts.
5. Bake in 2 loaf pans each 7-1/2x3-3/4x2-1/4 inches at 350 degrees F for 35-40 minutes (325 degrees F for black pans).
6. Cut each loaf into 12 slices.
