Watermelon Medley With Yogurt Dressing

Ingredients:
serves 4
yogurt dressing:
• 3/4 cup nonfat or low-fat vanilla yogurt
• 1 tablespoon frozen orange juice concentrate
• 1 teaspoon fresh lime juice
• 1 teaspoon grated lime zest
medley:
• 1 watermelon, cut into 20 equal-sided triangles (about 1/4 inch thick)
• 4 chilled kiwis, sliced into 1/4-inch-thick rounds
• 20 halved chilled green grapes
• 4 mint sprigs
Instructions:
To make dressing, place all ingredients in a small bowl and stir together. Chill in refrigerator.
To assemble medley, place 2 tablespoons dressing in center o each plate. With a spoon, spread out dressing to form a large circle. On top of dressing, fan 4 watermelon slices in pinwheel fashion at center of each plate. Place about 4 kiwi slices on top of each serving of watermelon slices, leaving watermelon partly exposed. Pile about 10 grape halves at center of kiwis. Garbish each with a mint sprig.
