Managing Diabetes Recipe of the Day

Frozen Tofu Cherry Cups

Use these directions as a basic guide and add any fruits and flavorings you like.
This mix also makes healthful Popsicles that do not drip.

Serving Size: 1 cup
Ingredients
Name Measure Weight
soft tofu, drained --- 12 oz
honey 2 tbsp ---
almond extract 1 tsp ---
almond or pecan cookies, crushed 2 ---
dark sweet cherries, halved and pitted 20 ---
cherries with stems for garnish 6 ---
Preparation Instructions
1. In food processor, process tofu, honey, almond flavoring, and half the cookies.
2. Fold in cherry halves.
3. Spoon into paper-lined muffin cups and sprinkle remaining crumbs.
4. Cover and freeze 2 hours or until firm.
5. Soften at room temperature 5-8 minutes before serving. Garnish with whole cherries.
